- 1 lb ground turkey (or substitute with chicken, beef, or plant-based meat)
- 4 large eggs (or substitute with egg whites)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika (optional)
- Fresh herbs (parsley or cilantro, for garnish)
Instructions
- Prepare Ingredients – Chop the onion, mince the garlic, and dice the bell pepper. In a bowl, whisk eggs with a pinch of salt and pepper.
- Cook the Turkey – Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté 3-4 minutes until translucent. Add garlic and cook for 1 minute. Stir in ground turkey, breaking it apart with a spoon, and cook until browned (6-8 minutes). Season with salt and pepper.
- Add Vegetables – Stir in diced bell pepper and cook 4-5 minutes until tender but still slightly crisp.
- Scramble the Eggs – Push the turkey mixture to one side of the skillet. Pour the whisked eggs into the empty side. Let them set slightly, then scramble gently. Once mostly cooked but slightly runny, mix with turkey and veggies. Continue cooking until eggs are soft and fluffy.
- Garnish & Serve – Remove from heat and sprinkle with fresh parsley or cilantro. Serve hot on its own or with toast, avocado, or salad.
