- 4 medium sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 3 tablespoons maple syrup
- Salt and pepper to taste
- 1 cup feta cheese, crumbled
- 1/2 cup walnuts, chopped and toasted
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the oven for 25–30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through.
- Once done, remove from the oven and let cool slightly.
- Transfer the sweet potatoes to a serving dish and sprinkle with crumbled feta cheese and toasted walnuts.
- Garnish with fresh parsley before serving.

- For a vegan option, substitute feta cheese with vegan feta or omit it entirely.
- Add a drizzle of balsamic glaze for extra depth of flavor.
