  • 4 medium sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1/2 cup walnuts, chopped and toasted
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the oven for 25–30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through.
  5. Once done, remove from the oven and let cool slightly.
  6. Transfer the sweet potatoes to a serving dish and sprinkle with crumbled feta cheese and toasted walnuts.
