Ingredients

- 2 large sweet potatoes, scrubbed and sliced into ½-inch rounds
- 1–2 tbsp olive oil
- Salt and black pepper, to taste
- 8 oz brie cheese, cut into thin slices
- 1/2 cup whole berry cranberry sauce (store-bought or homemade)
- 1/3 cup chopped toasted pecans
- Optional: honey for drizzling
- Optional: fresh rosemary for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice sweet potatoes into ½-inch thick rounds (peeling optional). Arrange on the baking sheet.
- Brush both sides of the rounds with olive oil and season with salt and pepper.
- Roast for 20–25 minutes, flipping halfway through, until fork-tender and golden at the edges.
- Remove from oven and place a slice of brie on each round. Return to oven for 3–4 minutes until melted.
- Top each with cranberry sauce, toasted pecans, and rosemary (if using).
- Drizzle with honey if desired. Serve warm and enjoy!
Notes
- These can be made dairy-free by using plant-based brie alternatives.
- Use fig jam or apple butter if cranberry sauce isn’t available.
- For nut-free version, omit pecans or replace with roasted pumpkin seeds.
- Toast pecans at 350°F for 5–7 minutes for extra flavor.
