- 2 cups (300g) fresh strawberries, hulled
- 1/4 cup (50g) granulated sugar
- 1 tablespoon lemon juice
- 1 cup (240ml) heavy whipping cream, cold
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Place the strawberries, granulated sugar, and lemon juice in a blender or food processor. Blend until smooth, then strain the puree through a fine mesh sieve to remove seeds. Set aside.
- In a large mixing bowl, beat the cold heavy whipping cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to over-whip.
- Gently fold the strawberry puree into the whipped cream using a spatula. Mix until well combined and smooth.
- Spoon the mousse into serving glasses or bowls. Smooth the tops with the back of a spoon.
- Chill in the refrigerator for at least 2 hours to set.
- Optional: Garnish with fresh strawberries, mint leaves, or a dollop of whipped cream before serving.
Notes
- Make sure the heavy whipping cream is cold for easier whipping.
- Adjust sweetness by adding more or less sugar based on your preference.
- Best served chilled for optimal texture and flavor.
