- 1 box strawberry cake mix (plus ingredients on the box — typically eggs, oil, and water)
- 1 cup chopped fresh or frozen strawberries
- 1/2 cup white chocolate chips
- 1/2 cup shredded coconut (optional)
- 1/2 cup chopped pecans or walnuts (optional)
For the cream cheese swirl:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish.
- Prepare the cake mix according to package directions. Stir in strawberries, white chocolate chips, and optional nuts or coconut.
- Pour batter into the baking dish and spread evenly.
- In a separate bowl, beat cream cheese, butter, powdered sugar, vanilla, and salt until smooth.
- Dollop cream cheese mixture over the cake batter and swirl gently with a knife or skewer.
- Bake for 35–45 minutes, or until the center is just set and edges are golden. A toothpick may come out with moist crumbs.
- Cool for at least 30 minutes before slicing. Serve warm, room temp, or chilled.
Notes
- Don’t overbake — the gooey center is key!
- Room temp cream cheese and butter make the swirl smoother.
- Let cake cool before slicing to help it set.
- Fresh strawberries work best, but thawed frozen berries are okay too.
- Optional: Dust with powdered sugar or serve with ice cream.
