Strawberry Crunch Cheesecake Bites

Strawberry Crunch Cheesecake Bites

Delicious, easy-to-make no-bake cheesecake bites featuring a creamy filling, sweet strawberry jam, and a delightful strawberry and Golden Oreo crunch topping.

  • Total Time: 50 minutes
  • Yield: 8 bites 1x

Ingredients

Scale
  • 4 oz (half block) cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy whipping cream (whipped to stiff peaks)
  • 1/4 cup crushed Golden Oreos
  • 1/4 cup crushed freeze-dried strawberries
  • 1/4 cup strawberry jam or preserves
  • 8 vanilla wafer cookies or mini tart shells (for base)
  • Optional: additional crushed cookies + strawberries for garnish

Instructions

  1. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Make sure there are no lumps—this step is key for that creamy texture!
  2. Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture using a spatula. Do this slowly to keep the mixture airy and light. The result should be silky, soft, and mousse-like.
  3. Prepare the Crunch Topping: In a small bowl, mix the crushed Golden Oreos and freeze-dried strawberries. This creates that signature strawberry crunch flavor and texture.
  4. Assemble the Bites: Place a vanilla wafer or mini tart shell as the base for each bite. Spoon a dollop of cheesecake filling on top. Use a piping bag if you want them to look extra cute and swirled!
  5. Add Strawberry Jam: Add about 1/2 tsp of strawberry jam on top of each cheesecake bite. Swirl it in slightly with a toothpick or spoon for a pretty marbled look.
  6. Top with Crunch: Sprinkle a generous amount of the strawberry crunch topping on each bite. Press it in slightly so it sticks to the creamy top.
  7. Chill and Serve: Chill the bites in the refrigerator for at least 30 minutes to help them firm up slightly. Serve cold and enjoy immediately!

Notes

  • Want a more structured base? Use mini cupcake liners or a silicone mold for easier handling and presentation.
  • These are freezer-friendly—pop them in for a quick frozen summer treat! Simply freeze them on a tray until solid, then transfer to an airtight container.
  • For a stronger strawberry flavor, you can add a tiny drop of strawberry extract to the cheesecake filling.
  • If you don’t have freeze-dried strawberries, you can finely chop fresh strawberries and pat them very dry, though the texture of the crunch will be different.
