Ingredients
Scale
- 1 lb fresh green beans, trimmed and halved
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 strips bacon, chopped (optional but recommended)
- 1 cup chicken broth (or vegetable broth for a vegetarian option)
- 1 tbsp olive oil (extra virgin preferred)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper, freshly ground
- ¼ tsp red pepper flakes (optional, for heat)
- 1 tbsp butter
Instructions
- Prepare the Green Beans – Rinse the green beans under cold water, trim the ends, and cut them in half for even cooking.
- Sauté the Aromatics – In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the bacon fat in the pan. Add onions and garlic, sautéing for 3-4 minutes until soft and fragrant.
- Assemble in Slow Cooker – Place the green beans in the slow cooker. Add the sautéed onions, garlic, bacon, chicken broth, salt, black pepper, and red pepper flakes. Stir to evenly coat the green beans in the seasoning.
- Slow Cook to Perfection – Cover and cook on low for 4-5 hours or high for 2-3 hours, depending on desired tenderness. Start checking at the 3-hour mark on low or 1.5-hour mark on high to prevent overcooking.
- Finishing Touches – Stir in butter for a rich, silky texture. Taste and adjust seasoning as needed. For extra depth, add a splash of soy sauce, apple cider vinegar, or a sprinkle of parmesan cheese.
- Serve & Enjoy – Transfer to a serving dish and enjoy hot! These green beans pair perfectly with roasted chicken, grilled steak, or baked fish.
