- 1 cup semi-sweet chocolate chips

Instructions
- Make the Filling: In a medium bowl, mix the softened cream cheese and peanut butter until smooth and creamy. Use an electric mixer for a fluffier texture.
- Sweeten and Flavor: Add the powdered sugar and vanilla extract (if using). Mix again until fully combined. The mixture should be thick but scoopable. If it’s too soft, refrigerate for 10–15 minutes.
- Shape the Balls: Scoop tablespoon-sized portions and roll them into balls using your hands. Place the balls onto a parchment-lined baking sheet or plate.
- Chill: Refrigerate the peanut butter cheesecake balls for at least 30 minutes to firm up. This will make them easier to dip in chocolate.
- Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil or butter. Microwave in 30-second intervals, stirring between each, until smooth and fully melted.
- Dip the Balls: Using a fork or skewer, dip each chilled ball into the melted chocolate. Tap off any excess chocolate and place them back on the parchment-lined tray.
- Garnish (Optional): While the chocolate is still wet, sprinkle with chopped peanuts for a little crunch and extra flair.
- Set and Serve: Chill again for about 15–20 minutes or until the chocolate coating is firm. Serve chilled or at room temperature.

- Use crunchy peanut butter for extra texture.
- You can substitute almond butter or sunflower seed butter.
- Store in an airtight container in the fridge for up to 1 week.
