- ½ cup vanilla protein powder (whey or plant-based)
- ⅓ cup almond butter (or any nut/seed butter)
- 2 tbsp honey (or maple syrup for vegan option)
- ¼ cup dried blueberries
- 1 tbsp chia seeds
- 1 tbsp shredded coconut
- 1 tsp lemon zest (from 1 small lemon)
- ½ tsp cinnamon (optional)
Instructions
- Mix the dry ingredients: In a large mixing bowl, combine the rolled oats, protein powder, chia seeds, shredded coconut, cinnamon, and lemon zest. Stir until evenly distributed.
- Add the wet ingredients: Add almond butter and honey (or maple syrup) to the dry mixture. Stir well using a sturdy spoon or your hands until the mixture holds together.
- Tip: If the mixture feels too dry, add a teaspoon of water or more almond butter. If it’s too wet, add a bit more oats.
- Fold in the blueberries: Gently mix in the dried blueberries until they are evenly incorporated.
- Roll into bites: Using your hands or a small cookie scoop, form the mixture into balls (about 1 inch in diameter). You should get around 10–12 bites.
- Chill and store: Place the bites in an airtight container and refrigerate for at least 30 minutes to firm up. Store them in the fridge for up to one week, or freeze for longer storage.
Notes
- Swap almond butter for sunflower seed butter to make it nut-free.
