Mediterranean Ground Beef Stir Fry

A quick, bold, and protein-packed one-skillet meal with seasoned ground beef, colorful veggies, lemon juice, and Mediterranean spices. Great for busy weeknights and meal prep!

Ingredients

    • 1 lb ground beef (85% or 90% lean)
    • 1 tablespoon olive oil
    • 1 small red onion, diced
    • 2 cloves garlic, minced
    • 1 red bell pepper, diced
    • 1 zucchini, chopped
    • 1 cup cherry tomatoes, halved
    • 1 teaspoon dried oregano
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon red pepper flakes (optional)
    • Juice of 1 lemon
    • Salt and pepper to taste

  • Crumbled feta cheese
  • Fresh parsley or dill
  • Kalamata olives
  • Pine nuts for crunch

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up, for 6–8 minutes until browned. Season lightly with salt and pepper.
  2. Add diced onion and garlic. Cook for 2–3 minutes until softened and fragrant.
  3. Stir in bell pepper, zucchini, and cherry tomatoes. Cook 5–7 minutes until tender-crisp.
  4. Mix in oregano, cumin, paprika, and red pepper flakes (if using). Stir to coat everything evenly.
  5. Squeeze in lemon juice. Taste and adjust seasoning as needed.
  6. Remove from heat and garnish with feta, parsley, or olives if desired. Serve warm.

Notes

  • Substitute ground turkey or lamb for beef if preferred.
  • Use whatever veggies you have on hand—eggplant, spinach, or kale work well too.
  • Serve over rice, couscous, or greens for a complete meal.
