- 1 lb ground beef (85% or 90% lean)
- 1 tablespoon olive oil
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- Juice of 1 lemon
- Salt and pepper to taste
- Optional toppings:
- Crumbled feta cheese
- Fresh parsley or dill
- Kalamata olives
- Pine nuts for crunch
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up, for 6–8 minutes until browned. Season lightly with salt and pepper.
- Add diced onion and garlic. Cook for 2–3 minutes until softened and fragrant.
- Stir in bell pepper, zucchini, and cherry tomatoes. Cook 5–7 minutes until tender-crisp.
- Mix in oregano, cumin, paprika, and red pepper flakes (if using). Stir to coat everything evenly.
- Squeeze in lemon juice. Taste and adjust seasoning as needed.
- Remove from heat and garnish with feta, parsley, or olives if desired. Serve warm.
Notes
- Substitute ground turkey or lamb for beef if preferred.
- Use whatever veggies you have on hand—eggplant, spinach, or kale work well too.
- Serve over rice, couscous, or greens for a complete meal.
