- 12 oz bow tie pasta (farfalle)
- 1 tablespoon olive oil
- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup tomato sauce or marinara
- 3/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley or basil, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the bow tie pasta until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and fully cooked (6–8 minutes).
- Add diced onion and cook until softened, about 3 minutes. Stir in garlic, oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.
- Pour in diced tomatoes and tomato sauce. Stir and let simmer for 3–4 minutes.
- Reduce heat to low, add heavy cream, and simmer for 2–3 minutes. Stir in parmesan cheese until melted and creamy.
- Add cooked pasta to the sauce. Toss to coat. Add reserved pasta water a little at a time if needed to loosen sauce. Season with salt and pepper to taste.
- Top with extra parmesan and fresh herbs. Serve hot and enjoy!
