Hot Honey Cowboy Butter Chicken Sliders with Crispy Onion Crunch

Ingredients

    • For the Chicken:
    • 1 ½ lbs boneless skinless chicken thighs (or breasts), cut into slider-sized pieces
    • 2 tbsp cowboy butter (butter mixed with garlic, parsley, lemon, paprika, and red pepper flakes)
    • 2 tbsp olive oil
    • 1 tsp smoked paprika
    • 1 tsp Cajun seasoning
    • ½ tsp black pepper
    • ½ tsp salt

 

    • For the Hot Honey Sauce:
    • ½ cup honey
    • 2 tbsp hot sauce
    • 1 tsp apple cider vinegar
    • ½ tsp red pepper flakes

 

  • For the Sliders:
  • 12 slider buns, toasted
  • 1 cup shredded mozzarella (or cheddar)
  • 1 cup crispy fried onions (store-bought or homemade)
  • 2 tbsp melted butter
  • 1 tbsp grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a skillet, heat olive oil and cowboy butter over medium-high heat. Add chicken pieces, season with smoked paprika, Cajun seasoning, salt, and pepper. Cook until golden brown and fully cooked, about 8–10 minutes.
  2. In a saucepan, whisk together honey, hot sauce, apple cider vinegar, and red pepper flakes. Simmer for 2–3 minutes until slightly thickened. Toss cooked chicken in hot honey sauce.
  3. Preheat oven to 375°F (190°C). Arrange bottom halves of slider buns in a greased baking dish. Layer with sauced chicken, mozzarella, and crispy fried onions. Place bun tops on.
  4. Mix melted butter with Parmesan and garlic powder. Brush over the tops of buns. Bake uncovered for 12–15 minutes, until cheese is melted and buns are golden.
  5. Garnish with parsley and serve warm.

Notes

  • You can swap mozzarella with cheddar or pepper jack for extra flavor.
  • Adjust the spice level by adding more or less hot sauce and red pepper flakes.
  • Serve with a side of coleslaw or pickles for balance.
