- For the Chicken:
- 1 ½ lbs boneless skinless chicken thighs (or breasts), cut into slider-sized pieces
- 2 tbsp cowboy butter (butter mixed with garlic, parsley, lemon, paprika, and red pepper flakes)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp Cajun seasoning
- ½ tsp black pepper
- ½ tsp salt

- For the Hot Honey Sauce:
- ½ cup honey
- 2 tbsp hot sauce
- 1 tsp apple cider vinegar
- ½ tsp red pepper flakes
- For the Sliders:
- 12 slider buns, toasted
- 1 cup shredded mozzarella (or cheddar)
- 1 cup crispy fried onions (store-bought or homemade)
- 2 tbsp melted butter
- 1 tbsp grated Parmesan cheese
- 1 tsp garlic powder
- 2 tbsp fresh parsley, chopped
Instructions
- In a skillet, heat olive oil and cowboy butter over medium-high heat. Add chicken pieces, season with smoked paprika, Cajun seasoning, salt, and pepper. Cook until golden brown and fully cooked, about 8–10 minutes.
- In a saucepan, whisk together honey, hot sauce, apple cider vinegar, and red pepper flakes. Simmer for 2–3 minutes until slightly thickened. Toss cooked chicken in hot honey sauce.
- Preheat oven to 375°F (190°C). Arrange bottom halves of slider buns in a greased baking dish. Layer with sauced chicken, mozzarella, and crispy fried onions. Place bun tops on.
- Mix melted butter with Parmesan and garlic powder. Brush over the tops of buns. Bake uncovered for 12–15 minutes, until cheese is melted and buns are golden.
- Garnish with parsley and serve warm.
Notes
- You can swap mozzarella with cheddar or pepper jack for extra flavor.
- Adjust the spice level by adding more or less hot sauce and red pepper flakes.
- Serve with a side of coleslaw or pickles for balance.
