- 1 pound ground turkey
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté for 2–3 minutes until the onion becomes translucent.
- Add the ground turkey to the skillet, breaking it into small pieces with a spoon. Cook until browned and fully cooked, about 5–7 minutes. Season with salt, pepper, oregano, and paprika.
- Stir in the diced zucchini and cherry tomatoes, cooking for an additional 3–4 minutes until the vegetables are tender.
- Add the orzo to the skillet, then pour in the chicken broth. Bring the mixture to a boil, then lower the heat to a simmer. Cover and cook for 10–12 minutes, or until the orzo is tender and the liquid is mostly absorbed.
- Remove from heat and mix in the fresh parsley. If desired, top with grated Parmesan cheese before serving.
Notes
- For extra creaminess, stir in a splash of heavy cream or a spoonful of Greek yogurt before serving.
- Make it spicy by adding red pepper flakes or cayenne pepper.
- Substitute ground chicken or beef if you prefer.
