- 1 pound ground beef
- 2 cups chopped fresh spinach (or thawed frozen spinach, squeezed dry)
- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add ground beef, breaking it up with a wooden spoon. Cook until browned, about 6–7 minutes.
- Season with oregano, paprika, salt, and black pepper. Stir to coat the beef evenly.
- Add chopped spinach and cook for 2–3 minutes until just wilted.
- Remove from heat and sprinkle crumbled feta cheese on top.
- Garnish with chopped fresh parsley and serve warm.
Notes
- Great served with rice, quinoa, or flatbread for a complete meal.
- Substitute ground turkey or chicken for a leaner option.
- For extra flavor, add a squeeze of lemon before serving.
