Garlic Parmesan Cheeseburger Bombs

Golden biscuit bombs stuffed with juicy cheeseburger filling, brushed in garlicky parmesan butter, and baked until perfectly fluffy, crispy, and melty. A crowd-pleasing snack or dinner that’s fun, flavorful, and addictively cheesy!

  • For the bombs:
  • 1 lb ground beef
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or American cheese
  • 1 can refrigerated biscuit dough (8-count, like Pillsbury Grands)
  • For the garlic butter topping:
  • 3 tablespoons melted butter
  • 2 cloves garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley or Italian seasoning (optional)

Instructions

  1. Preheat oven: Preheat to 375°F (190°C). Line a baking sheet with parchment or a silicone mat.
  2. Cook the beef: In a skillet over medium heat, cook ground beef until browned. Drain fat. Stir in ketchup, mustard, garlic powder, salt, and pepper. Let cool slightly.
  3. Prepare the dough: Separate biscuit dough. Flatten each biscuit into a 4–5 inch round using your hands or a rolling pin.
  4. Fill the bombs: Add 2 tablespoons of beef mixture and a pinch of shredded cheese to the center of each biscuit. Fold edges up and pinch to seal. Place seam-side down on the baking sheet.
  5. Make garlic butter: In a bowl, mix melted butter, minced garlic, Parmesan, and parsley.
  6. Bake: Brush each bomb with garlic butter. Bake for 15–18 minutes or until golden brown.
  7. Finish and serve: Brush with additional garlic butter if desired. Serve warm with ketchup, ranch, or burger sauce.

Notes

  • Add bacon for extra flavor—2 crumbled slices work great.
  • Swap beef for ground turkey or chicken if preferred.
  • Change up the cheese—mozzarella, gouda, or pepper jack all work.
  • Add pickles or jalapeños for extra punch.
  • Let filling cool slightly before stuffing to prevent dough tears.
  • For crispier bottoms, bake directly on the pan (no liner).
