Garlic Butter Steak Tips with Cheesy Rigatoni in Mozzarella Sauce

Juicy garlic butter steak tips seared to perfection, served with tender rigatoni smothered in a rich mozzarella cream sauce. A weeknight dinner that feels like a special occasion!

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
    • For the steak tips:
    • 1.5 lbs sirloin steak, cut into bite-sized cubes
    • Salt and black pepper, to taste
    • 1 tablespoon olive oil
    • 3 tablespoons unsalted butter
    • 4 cloves garlic, minced
    • 1 teaspoon Worcestershire sauce (optional but amazing)
    • 1 tablespoon chopped parsley (for garnish)

  • For the cheesy rigatoni:
  • 12 oz rigatoni pasta
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups whole milk
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • Salt and black pepper, to taste
  • Optional: pinch of red pepper flakes for a little kick

Instructions

  1. Boil the Pasta: Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
  2. Sear the Steak Tips: Pat steak dry, season with salt and pepper. Heat olive oil in a hot skillet, then sear steak tips 2–3 minutes per side in batches. Add butter, garlic, and Worcestershire; stir to coat. Cook 1–2 more minutes and set aside.
  3. Make the Mozzarella Sauce: In a saucepan, melt butter. Sauté garlic for 30 seconds. Whisk in flour and cook 1 minute. Gradually whisk in milk and cream, simmer until slightly thickened. Stir in mozzarella and parmesan. Season with salt, pepper, and red pepper flakes if using.
  4. Stir cooked rigatoni into the sauce. Add reserved pasta water as needed to loosen.
  5. Serve: Plate cheesy rigatoni, top with steak tips, and garnish with parsley and extra parmesan if desired.

Notes

  • Let the steak rest before serving to lock in juices.
  • Use freshly shredded cheese for a smoother sauce.
  • Customize with veggies like mushrooms or spinach.
  • Sub chicken for steak for a lighter twist.
  • Leftovers reheat beautifully with a splash of milk or cream.
