- For the steak tips:
- 1.5 lbs sirloin steak, cut into bite-sized cubes
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon Worcestershire sauce (optional but amazing)
- 1 tablespoon chopped parsley (for garnish)
- For the cheesy rigatoni:
- 12 oz rigatoni pasta
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 1/4 cups whole milk
- 1/2 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup parmesan cheese
- Salt and black pepper, to taste
- Optional: pinch of red pepper flakes for a little kick
Instructions
- Boil the Pasta: Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
- Sear the Steak Tips: Pat steak dry, season with salt and pepper. Heat olive oil in a hot skillet, then sear steak tips 2–3 minutes per side in batches. Add butter, garlic, and Worcestershire; stir to coat. Cook 1–2 more minutes and set aside.
- Make the Mozzarella Sauce: In a saucepan, melt butter. Sauté garlic for 30 seconds. Whisk in flour and cook 1 minute. Gradually whisk in milk and cream, simmer until slightly thickened. Stir in mozzarella and parmesan. Season with salt, pepper, and red pepper flakes if using.
- Stir cooked rigatoni into the sauce. Add reserved pasta water as needed to loosen.
- Serve: Plate cheesy rigatoni, top with steak tips, and garnish with parsley and extra parmesan if desired.
