- For the steak bites:
- 1 1/2 lbs sirloin steak, cut into 1-inch cubes
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon chopped fresh parsley (optional, for garnish)
- For the creamy mozzarella rigatoni:
- 12 oz rigatoni pasta
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Cook rigatoni according to package directions. Drain and set aside.
- Season steak bites with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear steak bites in batches for 2–3 minutes per side until browned. Remove and set aside.
- Reduce heat to medium, add butter and minced garlic to the skillet. Stir for 1–2 minutes until fragrant. Return steak bites and toss to coat. Keep warm.
- In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Slowly whisk in milk, garlic powder, salt, and pepper. Cook until slightly thickened, about 3–4 minutes.
- Stir in mozzarella and Parmesan until melted and creamy.
- Add cooked rigatoni to the sauce and toss to coat.
- Serve rigatoni topped with steak bites and a sprinkle of parsley if desired.
Notes
- For extra flavor, add a splash of white wine or beef broth when cooking garlic for steak bites.
- Swap mozzarella for provolone or fontina for a different cheese profile.
- Use ribeye or NY strip if preferred for the steak.
