Ingredients

    • For the steak bites:
    • 1 1/2 lbs sirloin steak, cut into 1-inch cubes
    • Salt and pepper to taste
    • 2 tablespoons olive oil
    • 4 tablespoons unsalted butter
    • 4 garlic cloves, minced
    • 1 tablespoon chopped fresh parsley (optional, for garnish)

 

  • For the creamy mozzarella rigatoni:
  • 12 oz rigatoni pasta
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook rigatoni according to package directions. Drain and set aside.
  2. Season steak bites with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear steak bites in batches for 2–3 minutes per side until browned. Remove and set aside.
  4. Reduce heat to medium, add butter and minced garlic to the skillet. Stir for 1–2 minutes until fragrant. Return steak bites and toss to coat. Keep warm.
  5. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  6. Slowly whisk in milk, garlic powder, salt, and pepper. Cook until slightly thickened, about 3–4 minutes.
  7. Stir in mozzarella and Parmesan until melted and creamy.
  8. Add cooked rigatoni to the sauce and toss to coat.
  9. Serve rigatoni topped with steak bites and a sprinkle of parsley if desired.

Notes

  • For extra flavor, add a splash of white wine or beef broth when cooking garlic for steak bites.
  • Swap mozzarella for provolone or fontina for a different cheese profile.
  • Use ribeye or NY strip if preferred for the steak.
