GARLIC BUTTER STEAK BITES & CREAMY ALFREDO RIGATONI

A luxurious combo of tender, garlicky steak bites and rich, creamy Alfredo rigatoni. Perfect for a date night dinner or indulgent weekend meal.

Ingredients

    • For the Garlic Butter Steak Bites:
    • 1.5 lbs sirloin steak (or ribeye or NY strip), cut into 1-inch cubes
    • Salt & black pepper, to taste
    • 1 tbsp olive oil
    • 3 tbsp unsalted butter
    • 5 garlic cloves, minced
    • 1 tsp Italian seasoning
    • 1 tbsp chopped fresh parsley (for garnish)

 

  • For the Creamy Alfredo Rigatoni:
  • 12 oz rigatoni pasta
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese (freshly grated if possible)
  • Salt & black pepper, to taste
  • Pinch of nutmeg (optional)
  • ½ cup reserved pasta water (if needed to thin the sauce)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook rigatoni according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.
  2. Sear the steak bites: Pat steak cubes dry and season with salt and pepper. Heat olive oil in a cast iron skillet over high heat. Sear steak in a single layer for about 2 minutes per side. Remove and set aside.
  3. Make the garlic butter: Reduce heat to medium. In the same skillet, melt butter and add garlic. Sauté for 1–2 minutes. Stir in Italian seasoning, return steak bites, and toss to coat. Garnish with parsley. Set aside.
  4. Make the Alfredo sauce: In the same pot used for pasta (or a saucepan), melt butter. Add garlic and cook for 1 minute. Pour in heavy cream, simmer 2–3 minutes, then stir in Parmesan until smooth. Season with salt, pepper, and nutmeg. Thin with pasta water if needed.
  5. Combine & serve: Add drained rigatoni to Alfredo sauce and toss to coat. Plate and top with steak bites, more Parmesan, and parsley.

Notes

  • Swap rigatoni with fettuccine, penne, or pappardelle.
  • Use half & half for a lighter Alfredo sauce.
  • Add mushrooms or spinach for extra veggies.
  • Top with red pepper flakes for a kick of heat.
  • Make it gluten-free with GF pasta and steak seasoning.
