- 1 lb ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil or butter
- 1 packet onion soup mix (or homemade)
- 1 cup long grain white rice (uncooked)
- 2 cups beef broth
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded mozzarella or Swiss cheese
- 1/2 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- Fresh thyme or parsley, for garnish
Instructions
- Preheat oven: Set to 350°F (175°C) and grease a 9×13-inch casserole dish.
- Brown beef: Heat olive oil in a skillet. Cook ground beef until browned. Drain fat. Add diced onion; cook 4–5 mins. Stir in garlic; cook 1 more minute.
- Mix everything: In a large bowl, mix beef/onion mix, uncooked rice, soup mix, beef broth, and sour cream. Season with salt & pepper.
- Bake covered: Transfer to casserole dish, cover with foil, and bake for 45 mins.
- Add cheese: Uncover, top with mozzarella & Parmesan. Bake 10–15 more mins until bubbly and rice is tender.
- Rest and serve: Let cool for 5–10 mins. Garnish with herbs and enjoy!
Notes
- Swap beef for turkey or chicken for a lighter option
- Add mushrooms or spinach for extra veggies
- Use brown rice but extend bake time by 15–20 mins and add 1/2 cup broth
- Worcestershire sauce adds more umami flavor
