French Onion Ground Beef and Rice Casserole

Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1 packet onion soup mix (or homemade)
  • 1 cup long grain white rice (uncooked)
  • 2 cups beef broth
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded mozzarella or Swiss cheese
  • 1/2 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. Preheat oven: Set to 350°F (175°C) and grease a 9×13-inch casserole dish.
  2. Brown beef: Heat olive oil in a skillet. Cook ground beef until browned. Drain fat. Add diced onion; cook 4–5 mins. Stir in garlic; cook 1 more minute.
  3. Mix everything: In a large bowl, mix beef/onion mix, uncooked rice, soup mix, beef broth, and sour cream. Season with salt & pepper.
  4. Bake covered: Transfer to casserole dish, cover with foil, and bake for 45 mins.
  5. Add cheese: Uncover, top with mozzarella & Parmesan. Bake 10–15 more mins until bubbly and rice is tender.
  6. Rest and serve: Let cool for 5–10 mins. Garnish with herbs and enjoy!

Notes

  • Swap beef for turkey or chicken for a lighter option
  • Add mushrooms or spinach for extra veggies
  • Use brown rice but extend bake time by 15–20 mins and add 1/2 cup broth
  • Worcestershire sauce adds more umami flavor
