Instructions
- Preparing the Crust – Preheat oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs with melted butter. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside.
- Creating the Cheesecake Filling – In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until combined. Beat in eggs, one at a time, ensuring each is fully mixed before adding the next. Fold in sour cream and flour until just incorporated.
- Baking the Cheesecake – Pour the filling over the prepared crust. Place the springform pan in a larger baking dish filled with 1 inch of hot water (this water bath prevents cracking). Bake for 55-65 minutes, or until the center is slightly set. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
- Cooling & Refrigerating – Let the cheesecake cool completely at room temperature before refrigerating for at least 4 hours, preferably overnight. This ensures the perfect creamy texture.
