Ingredients

  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1/2 cup almond butter
  • 1/3 cup honey or maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/8 tsp cloves
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease an 8×8-inch pan.
  3. Mix pumpkin, yogurt, eggs, and almond butter.
  4. Add honey and spices.
  5. Stir in baking powder and baking soda.
  6. Pour batter into pan.
  7. Bake 30–35 minutes until toothpick comes out clean.
  8. Cool before slicing.

Notes

  • For extra sweetness, add chocolate chips or a dusting of powdered sugar.
  • Store leftovers in the fridge for up to 4 days.
