- 1 cup pumpkin puree
- 1/2 cup Greek yogurt
- 2 eggs
- 1/2 cup almond butter
- 1/3 cup honey or maple syrup
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/8 tsp cloves
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Grease an 8×8-inch pan.
- Mix pumpkin, yogurt, eggs, and almond butter.
- Add honey and spices.
- Stir in baking powder and baking soda.
- Pour batter into pan.
- Bake 30–35 minutes until toothpick comes out clean.
- Cool before slicing.
Notes
- For extra sweetness, add chocolate chips or a dusting of powdered sugar.
- Store leftovers in the fridge for up to 4 days.
- This cake pairs wonderfully with whipped cream or vanilla Greek yogurt on top.
