- 6–8 sheets phyllo dough, thawed
- 3 tablespoons unsalted butter, melted
- 8 oz brie cheese, sliced thin (rind on or off)
- 1/3 cup cranberry sauce or fig jam
- 1/4 cup chopped candied pecans or walnuts
- 1 tablespoon honey or maple syrup
- A few fresh thyme leaves or rosemary sprigs
- Optional: pinch of cinnamon or nutmeg
- Optional: prosciutto or crispy bacon
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Lay one sheet of phyllo on the sheet and brush lightly with butter. Layer 3–4 more sheets, brushing each with butter.
- Spread a thin layer of cranberry sauce or honey in the center. Add sliced brie and your choice of fillings (nuts, herbs, etc.).
- Top with 2–3 more layers of buttered phyllo.
- Fold or trim the edges as desired.
- Bake for 20–25 minutes until golden and bubbly. Let cool for 5 minutes before slicing or serving whole.
- Optional: drizzle with more honey or sprinkle herbs on top before serving.
Notes
- Keep unused phyllo covered with a damp towel to prevent drying.
- Use a light hand with butter—just enough to crisp the layers.
- Don’t overload with fillings for the cleanest results.
- Serve warm for meltiest cheese experience.
- Reheat in oven or air fryer to restore crispness.
