Ingredients
• 2–3 chicken breasts, cut into cubes
• 3–5 small to medium potatoes, peeled and diced
• 1½ to 2 cans green beans, drained
• 1 (0.7 oz) packet dry Italian dressing mix
• 1 stick (½ cup) unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a large baking dish or use a disposable aluminum pan.
- Add cubed chicken, diced potatoes, and drained green beans to the baking dish. Spread evenly.
- Sprinkle Italian dressing mix over all ingredients.
- Drizzle melted butter evenly over the top.
- Cover tightly with foil and bake for 1 hour and 10 minutes, or until chicken is cooked through and potatoes are tender.
- Optional: Uncover during last 10 minutes of baking for a crisp, golden top.
- Serve hot and enjoy!
Notes
For a cheesy twist, sprinkle mozzarella or parmesan during the last 10 minutes of baking. You can swap in broccoli or asparagus, use chicken thighs, or add garlic powder and paprika for extra flavor.
