- 5–6 lb beef brisket, trimmed of excess fat
- 2 tbsp olive oil
- 2 tbsp smoked paprika
- 1 tbsp brown sugar
- 2 tsp kosher salt
- 2 tsp black pepper
- 1 tsp cayenne pepper (adjust to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup maple syrup
- 1/2 cup bourbon
- 1/2 cup smoky BBQ sauce
- 2 tbsp soy sauce (or tamari for GF)
- 2 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes
Instructions
- Mix smoked paprika, brown sugar, salt, pepper, cayenne, garlic powder, and onion powder. Rub evenly over brisket. Let rest 30 minutes.
- In a saucepan, combine maple syrup, bourbon, BBQ sauce, soy sauce, vinegar, garlic, and red pepper flakes. Simmer 10–12 minutes until slightly thickened. Set aside.
- Preheat oven to 300°F (150°C). Heat olive oil in skillet and sear brisket on all sides. Transfer to roasting pan, cover with foil, and cook 3–4 hours until tender (internal temp ~195°F).
- Uncover brisket and brush generously with glaze. Increase oven to 375°F. Return brisket for 20–30 minutes, basting halfway, until glaze darkens and clings.
- Rest brisket 15–20 minutes before slicing against the grain. Drizzle with extra glaze and serve.
Notes
- Bourbon can be swapped with dark rum, brandy, or apple juice for non-alcoholic.
- Honey or molasses can replace maple syrup, but maple gives the richest flavor.
- Add chipotle powder to the rub for smoky heat.
- Use your favorite BBQ sauce—sweet, smoky, or spicy.
- Best served with cornbread, slaw, roasted sweet potatoes, or grilled corn.
