Cursed Bourbon BBQ Brisket with Blackened Maple Glaze

A smoky, sticky, bold, and mysterious brisket. Slow-cooked until tender, then glazed with a maple-bourbon BBQ sauce that clings to every juicy slice.

Ingredients

  • 56 lb beef brisket, trimmed of excess fat
  • 2 tbsp olive oil
  • 2 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup maple syrup
  • 1/2 cup bourbon
  • 1/2 cup smoky BBQ sauce
  • 2 tbsp soy sauce (or tamari for GF)
  • 2 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Mix smoked paprika, brown sugar, salt, pepper, cayenne, garlic powder, and onion powder. Rub evenly over brisket. Let rest 30 minutes.
  2. In a saucepan, combine maple syrup, bourbon, BBQ sauce, soy sauce, vinegar, garlic, and red pepper flakes. Simmer 10–12 minutes until slightly thickened. Set aside.
  3. Preheat oven to 300°F (150°C). Heat olive oil in skillet and sear brisket on all sides. Transfer to roasting pan, cover with foil, and cook 3–4 hours until tender (internal temp ~195°F).
  4. Uncover brisket and brush generously with glaze. Increase oven to 375°F. Return brisket for 20–30 minutes, basting halfway, until glaze darkens and clings.
  5. Rest brisket 15–20 minutes before slicing against the grain. Drizzle with extra glaze and serve.

Notes

  • Bourbon can be swapped with dark rum, brandy, or apple juice for non-alcoholic.
  • Honey or molasses can replace maple syrup, but maple gives the richest flavor.
  • Add chipotle powder to the rub for smoky heat.
  • Use your favorite BBQ sauce—sweet, smoky, or spicy.
  • Best served with cornbread, slaw, roasted sweet potatoes, or grilled corn.
