- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 package (12 oz) stuffing mix
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1/2 cup water for added moisture
Instructions
- Place the chicken breasts at the bottom of the crockpot. Sprinkle with salt, pepper, garlic powder, and dried thyme.
- In a bowl, combine the cream of chicken soup and chicken broth. Mix until smooth, then pour over the chicken in the crockpot.
- In a separate bowl, mix the stuffing, celery, and onion. For a moister stuffing, incorporate 1/2 cup of water.
- Spread this stuffing mixture evenly over the chicken and soup mix in the crockpot.
- Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours, ensuring the chicken is tender and fully cooked.
- After cooking, shred the chicken with two forks and stir it into the stuffing.
Notes
- Use low-sodium chicken broth if preferred.
- You can substitute cream of chicken soup with cream of mushroom for a different flavor.
