Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) chicken broth
  • 1 package (12 oz) stuffing mix
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1/2 cup water for added moisture

Instructions

  1. Place the chicken breasts at the bottom of the crockpot. Sprinkle with salt, pepper, garlic powder, and dried thyme.
  2. In a bowl, combine the cream of chicken soup and chicken broth. Mix until smooth, then pour over the chicken in the crockpot.
  3. In a separate bowl, mix the stuffing, celery, and onion. For a moister stuffing, incorporate 1/2 cup of water.
  4. Spread this stuffing mixture evenly over the chicken and soup mix in the crockpot.
  5. Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours, ensuring the chicken is tender and fully cooked.
  6. After cooking, shred the chicken with two forks and stir it into the stuffing.

Notes

  • Use low-sodium chicken broth if preferred.
  • You can substitute cream of chicken soup with cream of mushroom for a different flavor.
