- For the chicken filling:
- 4 cups cooked, shredded chicken (rotisserie recommended)
- 8 oz cream cheese, softened
- 1 packet ranch seasoning mix (or 3 tbsp homemade)
- 1 cup sour cream
- 1/2 cup milk or heavy cream
- 2 cups shredded cheddar cheese
- 1 cup cooked, crumbled bacon (plus extra for topping)
- For the layers:
- 9–12 lasagna noodles, cooked al dente
- 2 cups shredded mozzarella cheese
- Optional: 1/4 cup grated Parmesan cheese
- Chopped green onions or parsley, for garnish
Instructions
- Boil lasagna noodles according to package instructions. Drain and lay flat on parchment or a lightly oiled surface to prevent sticking.
- In a large bowl, mix the shredded chicken, softened cream cheese, ranch seasoning, sour cream, milk or cream, cheddar cheese, and crumbled bacon until fully combined.
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Start layering: spread a small amount of chicken mixture on the bottom of the dish. Add 3–4 noodles in a single layer, then top with 1/3 of the chicken mixture and a sprinkle of mozzarella (and Parmesan, if using).
- Repeat layers until all ingredients are used, ending with a final layer of noodles topped with cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for another 10–15 minutes, until bubbly and golden on top.
- Let lasagna rest for 10 minutes before slicing. Garnish with extra bacon and green onions or parsley.
Notes
- Use pre-cooked chicken to save time—rotisserie is perfect.
- Substitute cheddar with Monterey Jack or Colby Jack if desired.
- Add sautéed spinach or mushrooms for a veggie boost.
- Make it spicy with pepper jack cheese or diced jalapeños.
- Swap sour cream with Greek yogurt for a lighter version.
