- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 8 oz cream cheese, softened
- ½ cup sour cream
- 1½ cups shredded cheddar cheese (or Monterey Jack)
- 1 can (10 oz) Rotel tomatoes with green chilies, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned & drained)
- ¼ cup green onions, chopped
- ¼ cup fresh cilantro, chopped
- Jalapeños (optional, for garnish)
Instructions
- Cook the Ground Beef:
- In a skillet over medium heat, cook ground beef until browned, breaking it into crumbles.
- Stir in taco seasoning and mix well. Drain excess fat and set aside.
- Prepare the Creamy Base:
- In a large mixing bowl, blend softened cream cheese and sour cream until smooth.
- Add the Cheese & Veggies:
- Stir in shredded cheddar cheese, Rotel tomatoes, black beans, corn, green onions, and cilantro.
- Mix until all ingredients are well combined.
- Incorporate the Ground Beef:
- Add the seasoned ground beef to the mixture and stir until evenly distributed.
- Bake the Dip:
- Preheat oven to 350°F (175°C).
- Transfer mixture to a greased oven-safe baking dish and spread evenly.
- Bake for 20-25 minutes until bubbly and golden on top.
- Optional: Broil for the last 2-3 minutes for extra crispiness.
- Garnish & Serve:
- Let cool slightly, then top with extra green onions, cilantro, or jalapeños.
- Serve warm with tortilla chips, pita bread, or fresh veggies.
