- 2 ½ tbsp (35g) granulated sugar
- ½ tsp salt
- 2 tbsp (30g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1 large egg
- 1 tsp vanilla extract
- Vegetable oil (for frying)
- ½ cup (100g) granulated sugar (for coating)
- 1 tsp ground cinnamon (for coating)

Instructions
- Prepare the Dough:
- In a medium saucepan, combine water, sugar, salt, and butter. Heat over medium heat until the butter melts and the mixture comes to a simmer.
- Reduce heat to low, add the flour, and stir vigorously with a wooden spoon until a smooth dough forms. Cook for 1-2 minutes until the dough pulls away from the sides of the pan.
- Cool and Add Egg:
- Transfer the dough to a mixing bowl and let it cool for 5 minutes.
- Beat in the egg and vanilla extract using a hand mixer or stand mixer until the dough is smooth and slightly sticky.
- Prepare for Frying:
- Heat about 2 inches of vegetable oil in a deep pan or pot to 375°F (190°C).
- Transfer the dough to a piping bag fitted with a star-shaped tip.
- Pipe and Fry:
- Pipe 5-6 inch strips of dough into the hot oil, cutting with scissors as you go. Fry in batches, turning occasionally, for 2-3 minutes, or until golden brown.
- Use a slotted spoon to transfer churros to a paper towel-lined plate.
- Coat and Serve:
- In a shallow dish, mix granulated sugar and ground cinnamon. Roll warm churros in the cinnamon sugar until fully coated.
- Serve immediately with chocolate or caramel sauce for dipping.

- For the best results, use a thermometer to maintain oil temperature while frying.
- Churros are best enjoyed fresh and warm for maximum crunch.
- Leftover churros can be reheated in the oven, but avoid microwaving to retain their crispiness.
