- 3 large eggs, room temperature
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
- 1/2 cup crushed sugar cookies (optional)
- For the topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 tsp vanilla extract
- Crushed sugar cookies
- Christmas sprinkles
Instructions
- Preheat oven to 325°F (163°C). Mix crushed cookies, sugar, and melted butter for crust. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
- Beat cream cheese until smooth. Add sugar, vanilla, and almond extract. Mix until creamy.
- Add eggs one at a time, mixing on low speed. Scrape down the sides between each addition.
- Mix in sour cream and flour until just combined. Fold in crushed cookies or sprinkles if using.
- Pour filling over crust. Tap gently to remove air bubbles.
- Bake at 325°F for 55–65 minutes until edges are set and center is slightly jiggly. Let cool in oven with door cracked for 1 hour.
- Cool to room temp, then refrigerate at least 4 hours or overnight.
- Beat heavy cream with powdered sugar and vanilla until soft peaks form. Spread or pipe on top.
- Top with crushed cookies and sprinkles before serving.
