- 8 oz (225g) semi-sweet chocolate, finely chopped
- 1/2 cup (120ml) heavy cream
- 1 tsp vanilla extract
- Cocoa powder, powdered sugar, or finely chopped nuts (for coating)
Instructions
- Place the finely chopped chocolate in a heatproof bowl.
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat.
- Pour the hot cream over the chocolate. Let it sit for 3-4 minutes to melt the chocolate.
- Add the vanilla extract, then gently stir until the mixture is smooth and glossy.
- Cover the bowl with plastic wrap and refrigerate for 2-3 hours until the mixture is firm enough to shape.
- Using a small cookie scoop or teaspoon, portion the chilled mixture and roll into balls between your palms.
- Roll each truffle in your choice of cocoa powder, powdered sugar, or chopped nuts for coating.
- Store in an airtight container in the fridge for up to 2 weeks. Serve chilled or at room temperature.
