- 900 g russet potatoes (about 4 large), cubed
- 1 large onion (150 g), sliced
- 400 g smoked sausage, sliced
- 200 g shredded cheese (cheddar or blend)
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 3 tbsp unsalted butter, melted
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Place cubed potatoes in a large resealable bag. Add melted butter, garlic, parsley, salt, and pepper. Seal and shake to coat evenly.
- Spread potatoes on a baking sheet and bake for 25–30 minutes, until mostly tender.
- Meanwhile, in a skillet over medium heat, sauté sliced onions and smoked sausage until onions are softened and sausage is browned.
- Remove potatoes from the oven and combine with the sausage and onions in a baking dish.
- Top evenly with shredded cheese.
- Return to oven and bake for 10–15 minutes, until potatoes are fully cooked and cheese is melted and bubbly.
- Serve hot, garnished with extra parsley if desired.
Notes
- You can substitute russet potatoes with red or gold potatoes for a creamier texture.
- Try adding bell peppers or mushrooms for extra flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
