Cheesy Smoked Sausage and Potato Bake

Ingredients

  • 900 g russet potatoes (about 4 large), cubed
  • 1 large onion (150 g), sliced
  • 400 g smoked sausage, sliced
  • 200 g shredded cheese (cheddar or blend)
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp unsalted butter, melted
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place cubed potatoes in a large resealable bag. Add melted butter, garlic, parsley, salt, and pepper. Seal and shake to coat evenly.
  3. Spread potatoes on a baking sheet and bake for 25–30 minutes, until mostly tender.
  4. Meanwhile, in a skillet over medium heat, sauté sliced onions and smoked sausage until onions are softened and sausage is browned.
  5. Remove potatoes from the oven and combine with the sausage and onions in a baking dish.
  6. Top evenly with shredded cheese.
  7. Return to oven and bake for 10–15 minutes, until potatoes are fully cooked and cheese is melted and bubbly.
  8. Serve hot, garnished with extra parsley if desired.

Notes

  • You can substitute russet potatoes with red or gold potatoes for a creamier texture.
  • Try adding bell peppers or mushrooms for extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
