- For the Pound Cake:
- 1 ½ cups (3 sticks) unsalted butter, room temperature
- 8 oz cream cheese, room temperature
- 3 cups granulated sugar
- 6 large eggs, room temperature
- 1 tbsp vanilla extract
- 3 cups all-purpose flour
- ½ tsp salt
- For the Caramel Glaze:
- ½ cup unsalted butter
- 1 cup packed light brown sugar
- ¼ cup milk or heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Prep the pan & oven: Preheat oven to 325°F (165°C). Grease and flour your Bundt pan thoroughly.
- Cream the butter and cream cheese: In a large mixing bowl, beat butter and cream cheese until smooth and fluffy (3–4 minutes).
- Add the sugar: Gradually add sugar, continuing to beat until light and airy.
- Add eggs one at a time: Beat in each egg until fully incorporated before adding the next.
- Add vanilla: Mix in the vanilla extract.
- Add flour and salt: Sift together flour and salt, then add gradually. Mix just until combined.
- Bake: Pour batter into prepared pan, smooth the top, and bake for 75–85 minutes, until a toothpick comes out clean.
- Cool: Cool in pan for 15–20 minutes before transferring to a wire rack to cool completely.
- Make the caramel glaze: In a saucepan, melt butter, then stir in brown sugar and milk. Let it boil for 1–2 minutes. Remove from heat, add vanilla and salt, and cool slightly.
- Glaze: Once the cake is cool, pour warm caramel glaze over the top. Let it drip beautifully down the sides.
