- 1 baguette or Italian loaf, sliced into ½–¾” thick slices
- 3 tablespoons olive oil, divided
- 1–2 garlic cloves, peeled
- 2–3 cups cherry tomatoes, halved
- ¼ red onion, very thinly sliced
- ½ cup fresh basil, chopped or torn
- 1 tablespoon balsamic vinegar
- Kosher salt and black pepper, to taste
- Flaky salt, balsamic glaze, more olive oil, and extra basil for garnish
- 1–2 balls burrata cheese
Instructions
- Toast the Bread: Brush bread slices lightly with 1 tablespoon olive oil and toast in a skillet, oven, or on the grill until golden and crisp. While still warm, rub one side of each piece with a peeled garlic clove.
- Make the Tomato Topping: In a bowl, toss together cherry tomatoes, red onion, basil, remaining 2 tablespoons olive oil, balsamic vinegar, salt, and pepper. Taste and adjust seasoning as needed.
- Add the Burrata: Gently break open the burrata. Arrange toasted bread (garlic side up) on a serving platter and spoon a bit of burrata onto each slice.
- Assemble: Top with the tomato mixture, then drizzle with more olive oil and balsamic glaze. Finish with a sprinkle of flaky salt and fresh basil.
- Serve: Enjoy immediately while everything is fresh and flavorful!
Notes
- For extra flavor, grill the bread for a light smoky char.
- You can substitute burrata with fresh mozzarella if needed.
