- 4 slices good-quality bread (sourdough, brioche, or rustic white)
- 6 oz brie cheese, sliced (rind on or off)
- 2–3 tablespoons blackberry jam
- 2 tablespoons softened butter (for spreading)
- Optional: pinch of sea salt or black pepper for garnish
- Optional add-ins: fresh thyme, arugula, or a slice of prosciutto
Instructions
- Butter the bread: Spread softened butter on one side of each slice of bread. These will be the outsides of your sandwiches.
- Assemble the sandwich: Place brie slices on the unbuttered side of two slices. Spread blackberry jam on the unbuttered side of the remaining slices, then sandwich jam side down onto the brie.
- Grill: Heat a skillet over medium-low heat. Cook sandwiches for 3–4 minutes per side until golden brown and cheese is melted. Press gently with a spatula as they cook.
- Rest and serve: Let cool for 1 minute before slicing. Optional: sprinkle with flaky salt or drizzle with honey for a finishing touch.
Notes
- Don’t overload the jam—a thin layer is enough for balance.
- If brie is very soft, chill it for 10 minutes before slicing for easier handling.
- Use a lid on your skillet to help melt the cheese faster without burning the bread.
- Great with fig, raspberry, or even hot pepper jelly instead of blackberry jam.
- Add chopped walnuts or crushed red pepper for crunch or heat.
