Ingredients

- 4 slices of bread (sourdough, white, or whole grain)
- 2 large eggs
- 2 sausage patties (or 1/2 cup cooked sausage crumbles)
- 1/2 cup shredded cheddar cheese (or 2 slices)
- 1/2 cup shredded mozzarella or Monterey Jack
- 1 tbsp milk or cream
- 2 tbsp butter
- Salt and pepper to taste
- Optional: pinch of red pepper flakes or chopped chives
Instructions
- Cook the sausage in a skillet over medium heat until browned and cooked through. Set aside.
- In a bowl, whisk together eggs, milk or cream, salt, and pepper. In the same skillet, melt a little butter and cook eggs gently over low heat until just set and creamy.
- Lay out the bread slices. On two slices, layer half the cheese, followed by scrambled eggs, sausage, and the remaining cheese. Top with remaining bread slices.
- Butter the outside of each slice of bread.
- Heat a skillet or griddle over medium heat. Grill sandwiches 3–4 minutes per side, pressing gently with a spatula, until golden and the cheese is melted.
- Slice and serve hot.
Notes
- Use low heat for eggs to keep them soft and fluffy.
- Shredding your own cheese helps it melt more evenly.
- Try different meats or cheeses to change it up.
- Can be wrapped and refrigerated for quick reheating later.
