  • 1 lb breakfast sausage
  • 8 slices bacon, cooked and crumbled
  • 1/2 lb ground beef
  • 1 small onion, finely chopped
  • 6 eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Monterey Jack (optional)
  • 1/4 cup chopped green onions (for garnish, optional)
  • Cooking spray or butter for greasing baking dish

Instructions

  1. Prep the Meats: In a large skillet over medium heat, cook breakfast sausage until browned and fully cooked. Transfer to a plate and set aside. In the same skillet, cook ground beef with chopped onion until browned and no longer pink. Season with salt and pepper. Drain excess grease. Stir in cooked, crumbled bacon and set all meats aside.
  2. Scramble the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Lightly grease a nonstick pan with butter or cooking spray, scramble the eggs until just set (don’t overcook—they’ll bake again in the oven). Set aside.
  3. Assemble the Lasagna: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Start layering as follows: First layer: 3 lasagna noodles. Next: Half the sausage and ground beef mixture. Then: Half the scrambled eggs. Sprinkle with a mix of cheddar, mozzarella, and Monterey Jack. Repeat with another layer of noodles, meat, eggs, and cheese. Top with final 3 noodles and remaining cheese.
  4. Bake: Cover loosely with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes, until cheese is melted and bubbly.
  5. Rest and Serve: Let the lasagna rest for 10 minutes before slicing to help layers set. Garnish with chopped green onions for a fresh finish!
