- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- ½ ripe banana, mashed
- ½ cup oat flour (or almond flour for low-carb)
- 1 tablespoon honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Pinch of salt
- ½ cup fresh or frozen blueberries
Instructions
- Preheat & Prep: For oven, preheat to 350°F (175°C) and grease a mini muffin tin or line with parchment cups. For air fryer, set to 320°F (160°C) and prepare silicone molds.
- Blend the Batter: In a blender, combine cottage cheese, eggs, mashed banana, honey (if using), and vanilla extract. Blend until smooth. Add oat flour, baking powder, and salt, then blend or whisk until lump-free.
- Add Blueberries: Gently fold in blueberries with a spatula to evenly distribute.
- Bake or Air Fry: For oven, spoon batter into muffin cups (¾ full) and bake for 18–22 minutes until golden. For air fryer, fill silicone molds (¾ full) and cook for 10–12 minutes until fluffy.
- Cool & Serve: Let cool for 5 minutes before removing from tin or molds. Enjoy warm or chilled with a drizzle of maple syrup or yogurt.
Notes
- Great for meal prep—store in fridge up to 4 days or freeze for longer.
- You can swap banana with unsweetened applesauce.
- Try adding cinnamon or lemon zest for extra flavor.
