  • ¼ tsp ground red pepper
  • 15 oz reduced-fat ricotta cheese
  • 2 medium zucchinis, thinly sliced lengthwise (about 1/8 inch thick)
  • 1 large egg
  • 1 cup shredded part-skim mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cups marinara sauce (use your favorite jarred or homemade)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray or 1 tsp olive oil (for greasing)

Instructions

  1. Prepare the Zucchini Noodles: Slice the zucchinis lengthwise into thin ribbons using a mandoline or sharp knife. Lay them on paper towels and sprinkle lightly with salt. Let sit for 15 minutes to draw out excess moisture, then pat dry. This step helps prevent a watery lasagna.
  2. Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned and no longer pink, about 6-8 minutes. Drain any excess fat. Add the ground red pepper and stir in the marinara sauce. Simmer for 5 minutes to meld the flavors.
  3. Make the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and black pepper. Mix until smooth.
  4. Assemble the Lasagna: Lightly grease a 9×13-inch baking dish. Spread a thin layer of meat sauce on the bottom. Layer zucchini slices over the sauce, followed by half the ricotta mixture, a sprinkle of mozzarella, and a bit of Parmesan. Repeat layers: meat sauce, zucchini, remaining ricotta, mozzarella, and finish with remaining sauce and the rest of the cheese.
  5. Bake: Preheat oven to 375°F (190°C). Cover the dish with foil and bake for 30 minutes. Uncover and bake for another 10-15 minutes, until bubbly and golden on top. Let the lasagna rest for at least 10 minutes before slicing. This helps it set and makes serving easier.
