Ingredients
Scale
- For the Dough:
- 4 cups all-purpose flour
- 1/3 cup packed light brown sugar
- 2 1/4 teaspoons Rapid Rise yeast
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 cup milk
- 6 tablespoons unsalted butter
- 2/3 cup mashed overripe banana
- For the Cinnamon Sugar Filling:
- 1/4 cup unsalted butter, at room temperature
- 1/2 cup packed light brown sugar
- 1 tablespoon ground cinnamon
- Pinch of salt
- For the Cinnamon Cream Cheese Frosting:
- 1/3 cup unsalted butter, at room temperature
- 2 ounces cream cheese, at room temperature
- 2 cups powdered sugar
- 2 teaspoons ground cinnamon
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Make the Dough: In a large bowl, combine 2 cups of flour, brown sugar, yeast, cinnamon, and salt. Mix well.
- In a microwave-safe bowl, heat milk and butter for about 30 seconds until warm (not hot). Stir in mashed banana.
- Pour wet ingredients into dry ingredients and mix on low speed, then high, for about 2 minutes. Add remaining flour gradually until a soft dough forms.
- Knead on a floured surface for 10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for 1 hour, or until doubled in size.
- Prepare the Filling: Mix brown sugar, cinnamon, and salt in a bowl. Set aside.
- Assemble the Rolls: Roll dough into an 18×12-inch rectangle. Spread softened butter evenly, then sprinkle cinnamon sugar mixture and press lightly. Roll tightly into a log and slice into 12 rolls using dental floss or a sharp knife.
- Arrange in a parchment-lined 9×13-inch pan, cover, and let rise again for 1 hour until doubled.
- Bake: Preheat oven to 350°F (175°C). Bake for 30 minutes or until golden brown and baked through.
- Make the Frosting: Beat butter, cream cheese, powdered sugar, cinnamon, milk, vanilla, and salt until light and fluffy. Spread generously over warm rolls.
Notes
- Use overripe bananas for the best flavor.
- Make-ahead: prepare through the second rise, refrigerate overnight, then bake in the morning.
- For dairy-free rolls, use plant-based milk and vegan butter.
- Freeze baked, unfrosted rolls for up to 2 months.
- Dental floss makes clean, perfect slices.
