  • For the Cinnamon Cream Cheese Frosting:
  • 1/3 cup unsalted butter, at room temperature
  • 2 ounces cream cheese, at room temperature
  • 2 cups powdered sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Make the Dough: In a large bowl, combine 2 cups of flour, brown sugar, yeast, cinnamon, and salt. Mix well.
  2. In a microwave-safe bowl, heat milk and butter for about 30 seconds until warm (not hot). Stir in mashed banana.
  3. Pour wet ingredients into dry ingredients and mix on low speed, then high, for about 2 minutes. Add remaining flour gradually until a soft dough forms.
  4. Knead on a floured surface for 10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for 1 hour, or until doubled in size.
  5. Prepare the Filling: Mix brown sugar, cinnamon, and salt in a bowl. Set aside.
  6. Assemble the Rolls: Roll dough into an 18×12-inch rectangle. Spread softened butter evenly, then sprinkle cinnamon sugar mixture and press lightly. Roll tightly into a log and slice into 12 rolls using dental floss or a sharp knife.
  7. Arrange in a parchment-lined 9×13-inch pan, cover, and let rise again for 1 hour until doubled.
  8. Bake: Preheat oven to 350°F (175°C). Bake for 30 minutes or until golden brown and baked through.
  9. Make the Frosting: Beat butter, cream cheese, powdered sugar, cinnamon, milk, vanilla, and salt until light and fluffy. Spread generously over warm rolls.
