Ingredients

  • 2 large Honeycrisp apples, diced
  • 2 celery stalks, thinly sliced
  • 1 cup seedless red grapes, halved
  • 1/2 cup pecans, roughly chopped
  • 1/3 cup dried cranberries
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice (optional, to prevent browning)
  • Salt and pepper to taste

Instructions

  1. Dice the Honeycrisp apples and toss them with lemon juice if using.
  2. Thinly slice the celery and halve the grapes.
  3. In a large mixing bowl, combine apples, celery, grapes, pecans, and cranberries.
  4. In a separate small bowl, whisk together the Greek yogurt and mayonnaise.
  5. Pour the dressing over the salad ingredients and gently toss to coat evenly.
  6. Add salt and pepper to taste.
  7. Cover and refrigerate for 30 minutes to chill before serving.

Notes

  • Use Honeycrisp for sweetness and crunch, but Fuji or Gala also work well.
  • Toast pecans lightly in a skillet for extra flavor.
  • Add a drizzle of honey for extra sweetness if desired.
